Festive Impossible Quiche: Smoked ham and cranberry sauce elevate this holiday dish.
Ingredients:
  • 40.00 ml pine nuts
  • 9.20 gm olive oil
  • 1 leek, trimmed, thinly sliced
  • 100g pkt baby spinach
  • 100g smoked ham, coarsely chopped
  • 80g (1 cup) coarsely grated cheddar
  • 4 eggs
  • 100g (2/3 cup) self-raising flour
  • 250ml (1 cup) milk
  • 160ml (2/3 cup) cooking cream
  • Cranberry sauce, warmed, to drizzle
Instructions:
  • Preheat the oven to 180C (160C fan-forced).
  • Toast pine nuts in a large non-stick, ovenproof frying pan over medium heat, stirring often, for 3 minutes until golden. Transfer to a small bowl and set aside.
  • In a hot pan, sauté the leek in oil for 5 minutes until softened, then set aside 1/2 cup of spinach. Add the rest of the spinach to the pan and cook for 3 minutes until wilted. Remove from heat.
  • Top the leek mixture with the ham and cheddar. In a jug, mix the eggs, flour, milk, and cream. Pour the mixture into the pan. Bake for 40-45 minutes or until it's set.
  • Simply drizzle the quiche with cranberry sauce, top with reserved spinach, sprinkle with pine nuts, and serve.
