Spiced cherry pies

Indulge in irresistible spiced cherry pies this Christmas – impossible to eat just one!
Ingredients:
  • 3 sheets shortcrust pastry, partially thawed
  • 1 free range egg, lightly whisked
  • 500g cherries, pitted
  • 2.50 gm mixed spice
  • 10.60 gm lemon juice
  • 75g caster sugar
  • 1 tsp vanilla bean paste
  • 15.00 gm cornflour
Instructions:
  • Preheat your oven to 200C. Grease a muffin pan with 12 1/3 cup (80ml) holes and also grease and line a baking tray.
  • Cut out 12 discs from 2 sheets of pastry using a 9cm round cutter. Line muffin holes with the pastry discs. Cut out 12 stars from the remaining pastry using a 5cm star cutter and place them on a prepared tray. Freeze the pastry bases and stars for 15 minutes. Brush the stars with egg wash. Bake the pastry bases for 10 minutes and the stars for 6 minutes until golden. Cool on a wire rack.
  • Simmer cherries, mixed spice, lemon juice, caster sugar, and vanilla in a saucepan until sugar dissolves. Increase heat and cook for 4 mins until cherries soften. Thicken with cornflour mixture, cook for 1 min until bubbly and thick. Let cool for 15 mins.
  • Fill the pastry bases with the cherry mixture and then top them with pastry stars. Before serving, dust the pies with icing sugar for an extra touch of sweetness.
