Christmas Morning Casserole Muffins: A simple and savory delight with baking mix, sausage, and Cheddar cheese.
Ingredients:
  • cooking spray
  • 1 (16 ounce) package bulk pork sausage
  • 2 cups half-and-half
  • 1 cup baking mix (such as Bisquick®)
  • 6 eggs
  • 0.25 teaspoon ground black pepper
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly coat 12 muffin cups with cooking spray.
  • Cook the sausage in a large skillet over medium-high heat until browned and crumbly, about 5 to 7 minutes. Drain the sausage and place it in the prepared muffin cups.
  • Combine half-and-half, baking mix, eggs, salt, and black pepper in a bowl, then pour over sausage. Sprinkle Cheddar cheese on top of each muffin.
  • Bake until golden brown and bubbly, for around 25 minutes in the preheated oven.
