Delicious breakfast casserole with biscuits, bacon, and make-ahead potatoes. Ideal for a quick and festive Christmas morning meal!
Ingredients:
  • 1 tablespoon olive oil, or as needed
  • 4 large potatoes, peeled and cubed
  • 1.5 pounds bacon
  • 1 (16.3 ounce) can refrigerated biscuit dough
  • nonstick cooking spray
  • 5 cups shredded Cheddar cheese, divided
  • 11 large eggs
  • 0.25 cup milk
Instructions:
  • In a large nonstick skillet over medium-high heat, swirl oil to cover the pan. Add the potatoes, generously season with salt and pepper, and cook until beautifully golden brown, approximately 10 minutes. Transfer the potatoes out of the skillet.
  • Cook the bacon in the skillet over medium-high heat, turning occasionally, until crispy and evenly browned, about 10 minutes. Drain the cooked bacon slices on paper towels.
  • Preheat the oven to 350°F (175°C) and generously spray a 9x13-inch baking pan with nonstick spray.
  • Quarter each biscuit and arrange evenly on the bottom of the baking pan. Layer with potatoes, bacon, and 2 cups of Cheddar cheese. Mix eggs and milk in a bowl, then pour over the cheese evenly.
  • Place in the preheated oven and bake for 20 minutes. Sprinkle the remaining 3 cups of Cheddar on top and bake for an additional 10 minutes, or until a toothpick inserted in the center comes out clean.
