Festive sour cream and cottage cheese noodle casserole - perfect for holiday brunch!
Ingredients:
  • 0.5 pound egg noodles
  • 2 tablespoons melted butter, plus more for greasing
  • 1 pint sour cream
  • 1 cup cottage cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup grated onion
  • 2 tablespoons finely chopped fresh parsley
  • 0.125 teaspoon garlic powder
Instructions:
  • Boil a pot of salted water and cook egg noodles until perfectly al dente, about 6 to 8 minutes. Drain and mix with melted butter. Set aside.
  • Preheat the oven to 350 degrees F (175 degrees C) and generously coat a casserole dish with butter.
  • In a bowl, whisk eggs, sour cream, and cottage cheese until smooth. Mix in Parmesan cheese, onion, parsley, garlic powder, salt, and pepper until fully combined. Add cooked egg noodles and toss to coat. Transfer the mixture to a casserole dish.
  • Simply bake in the oven that has been preheated until everything is heated through, approximately 20 minutes.
