Christmas tree meringue pops

Create adorable sweet meringue trees perfect for decorating cakes or gifting as festive treats.
Ingredients:
  • Green gel or paste food colouring (see tip)
  • 2 egg whites, at room temperature
  • Pinch of cream of tartar
  • 100g (1/2 cup) caster sugar
  • 100g white chocolate, melted
  • Assorted sprinkles, to decorate
Instructions:
  • Preheat your oven to 120C/100C fan forced. Draw 6 triangles measuring 5cm along the base and 7.5cm high on each of the 2 sheets of baking paper. Place the paper, marked side down, on 2 baking trays.
  • With electric beaters, whip egg whites and cream of tartar until stiff peaks form. Slowly incorporate sugar, 1 tablespoon at a time, while beating continuously until sugar dissolves and meringue becomes thick and glossy.
  • Brush green food coloring inside a piping bag fitted with a 5mm plain nozzle. Fill the bag with meringue, then pipe a squiggly pattern over the marked triangles. Insert a lollipop stick into each meringue and bake for 1 hour until firm. Turn off the oven and let them cool inside with the door slightly open for 1 hour.
  • Transfer the smooth melted chocolate into a small sealed bag and cut a corner off. Proceed to elegantly drizzle the trees with the chocolate, then adorn them with a variety of delightful sprinkles. Allow them to sit undisturbed until the chocolate firms up.
