Festive Christmas centerpiece for joyous gatherings.
Ingredients:
  • 500g royal icing mix (see note)
  • 4 x 100g boxes small meringues (see note) (you'll need about 170 meringues)
  • 20 golden cachous or silver cachous (see note)
Instructions:
  • Wrap the mould in plastic wrap and foil. Sift royal icing mix into a bowl, add 1/3 cup (80ml) warm water, and beat with electric beaters until soft dropping consistency. Spread half of the icing mixture over the mould (coverage doesn't need to be perfect).
  • Evenly spread the remaining royal icing on the bottom of each meringue. Begin building the tower at the base of the mold, stacking meringues in circular layers until the tower is fully covered. Place cachous between meringues using tweezers, gently pressing them into the icing to adhere.
