Shortbread Christmas trees

Create adorable Christmas tree decorations for your festive table centerpiece.
Ingredients:
  • 200g unsalted butter, chilled, chopped
  • 107.50 gm caster sugar
  • 65.00 gm rice flour
  • 375.00 ml plain flour
  • 8.80 gm vanilla extract
  • 100g white chocolate, chopped
  • Silver cachous, to decorate
  • Icing sugar mixture, to decorate
Instructions:
  • Combine butter, sugar, flours, and vanilla in a food processor, pulsing until dough just forms, scraping down the sides if necessary. Transfer the mixture to a lightly floured surface and gently knead to combine.
  • Divide the dough in half and shape each half into discs. Wrap them in plastic wrap and refrigerate for 30 minutes or until they are just firm.
  • Preheat the oven to 170C/150C fan-forced, then grease and line 4 large baking trays with baking paper.
  • Roll out the dough to a thickness of 3mm between 2 sheets of baking paper. Use a 7.5cm star-shaped cutter to cut out 8 stars, then repeat with a 7cm star-shaped cutter for the remaining dough trimmings. Arrange the stars 2cm apart on 2 prepared trays. Bake them one tray at a time for 10 minutes until they are firm to the touch but not browned. Let them cool on the trays for 10 minutes before transferring them to a wire rack to cool completely.
  • Cut various sizes of stars from the dough, re-roll the trimmings, and continue cutting until all the dough is used up. Place the stars on baking trays, except for the smallest ones. Bake one tray at a time for 10 minutes, until the stars are just firm to the touch but not browned. Add the smallest stars halfway through baking. Let the stars cool on the trays for 10 minutes, then transfer them to a wire rack to cool completely.
  • Place the white chocolate in a microwave-safe bowl and microwave on HIGH for 1 minute, stirring every 30 seconds with a metal spoon until smooth. Let it stand for 5 minutes to cool slightly before using.
  • Transfer 1/3 of the chocolate into a sealable bag. Cut off a small corner. Pipe chocolate dots onto the tips of each star following the photo. Add cachous for decoration, gently pressing to stick. Let it sit for 5 minutes until the chocolate sets.
  • Lay out 4 large star-shaped cookies on a baking sheet lined with parchment paper. Fill the center of each star with a bit of extra melted chocolate. Place another same-sized star on top, rotating it to create a layered effect. Continue stacking with chocolate and the rest of the stars (excluding the smallest ones) to assemble 4 Christmas trees.
  • Drizzle melted chocolate on top of each Christmas tree. Place 2 small stars on top of each tree, gently pressing to secure. Pipe remaining chocolate on trees in a decorative pattern, letting it drip down. Allow to set for 20 minutes. Dust generously with icing sugar before serving.
