Gift festive shortbread tree cookies for all ages.
Ingredients:
  • 120g unsalted butter, softened
  • 60g caster sugar
  • 120g plain flour
  • 60g rice flour (see note)
  • 1 eggwhite, very lightly beaten
  • 125.00 ml 100s and 1000s
Instructions:
  • Preheat the oven to 180°C for a perfect bake.
  • Combine ingredients in a food processor until just mixed. Transfer onto a floured surface and knead into a rough dough ball by hand. Roll the dough to 1/2 cm thickness with a floured rolling pin. Cut shapes with a cookie cutter, place on a greased baking tray, and bake for 20-25 minutes. Brush with egg white, sprinkle with 100s and 1000s, then bake for 1 more minute.
  • Cool the mixture completely before placing it into boxes lined with tissue paper.
