Get creative with festive Christmas tree crackle pops for the kids.
Ingredients:
  • 550g white chocolate, chopped
  • 100g copha
  • 82.50 ml pistachio kernels, toasted, chopped
  • 125.00 ml dried cranberries, finely chopped
  • 63.75 gm desiccated coconut
  • 625.00 ml puffed rice cereal
  • 160g packet M&M's Minis (pink and brown colours discarded), to decorate
Instructions:
  • Prepare a 6cm-deep, 22cm round springform pan by greasing it and lining both the base and sides with baking paper.
  • In a large microwave-safe bowl, combine 500g of chocolate and copha. Microwave on HIGH for 2 minutes, stirring halfway through, until melted and smooth. Add pistachios, cranberries, coconut, and puffed rice cereal. Mix until well combined. Press mixture firmly into prepared pan, smooth the surface, and refrigerate for 1 hour until set.
  • Trim the lollipop sticks to 11cm long. Remove the White Christmas from the pan and place it on a chopping board. Cut it into 10 wedges using a sharp knife. Insert 1 white and 1 blue lollipop stick into the rounded edge of each wedge to create Christmas trees.
  • Transfer the rest of the chocolate to a microwave-safe bowl and heat on HIGH for 1 minute or until melted. Put the melted chocolate into a snap-lock bag, snip off a corner, and follow the picture to create chocolate Christmas trees, securing M&M's with the melted chocolate. Allow 20 minutes for the chocolate to set before serving.
