Christmas trifle

Impress loved ones with a decadent Christmas trifle.
Ingredients:
  • 2 x 85g packets port wine or raspberry Jelly
  • 400g packet jam Swiss roll, cut into 3cm cubes
  • 86.63 gm orange juice, sherry or orange-flavoured liqueur
  • 1 litre vanilla custard
  • 425g can mixed berries, well drained
  • 300ml tub whipping cream, whipped
  • 170g can brand passionfruit pulp
  • 1/2 x 110g packet flaked almonds, toasted
Instructions:
  • Prepare the jelly as instructed on the packet. Transfer the jelly into either one large rectangular tray or two smaller trays. Chill in the refrigerator for 3-4 hours, or until firm.
  • Dice the jelly. Layer half of the Swiss roll cubes at the bottom of a large glass serving bowl. Drizzle half of the orange juice, sherry, or liqueur over the cubes. Add half of the custard and half of the diced jelly. Spread out all of the berries on top.
  • Continue layering the remaining swiss roll, orange juice, custard, and jelly. Smooth over the whipped cream. Cover with plastic wrap and refrigerate for 3-4 hours.
  • Drizzle passionfruit over the dish and sprinkle with almonds before serving.
