Hearty ratatouille, ideal for lunch on the go.
Ingredients:
  • 1 red onion, cut into wedges
  • 1 red capsicum, cut into 2cm pieces
  • 1 eggplant, cut into 2cm pieces
  • 250g cherry tomatoes
  • 1 garlic clove, finely chopped
  • 56.88 gm extra virgin olive oil
  • 2 tsp finely chopped fresh thyme leaves
  • Small fresh basil leaves, to serve
Instructions:
  • Preheat barbecue grill or chargrill pan to medium-high heat. Combine onion, capsicum, eggplant, tomatoes, garlic, oil, and thyme in a large bowl. Season with salt and pepper, then toss to coat evenly. Grill half of the vegetables for 10 minutes, tossing occasionally, until lightly charred and eggplant is tender. Transfer to a serving bowl. Repeat with the remaining vegetables. Serve warm or at room temperature topped with basil.
