Delicious churro pancakes with Cinnamon Smear from Betty Crocker Bisquick Quick to the Table cookbook for a sweet twist.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 1 1/2 teaspoons ground cinnamon
  • 2 cups Bisquick™ Original Pancake and Baking mix
  • 1 cup milk
Instructions:
  • Preheat nonstick griddle to 300°F and coat it with 1 tablespoon of oil.
  • In a large bowl, combine sugar and cinnamon; set aside 2 tablespoons. Add Bisquick mix and milk to the remaining cinnamon-sugar mixture. Mix until just a few lumps are left.
  • Transfer half of the batter into a quart-size resealable plastic bag and snip a small tip from one end. Pipe the batter onto a hot griddle in 3 to 4-inch spirals, starting from the center and working outwards, leaving about 1/4 inch of space between lines. Cook for 30 to 60 seconds on each side or until lightly browned. Sprinkle each pancake immediately with 1 teaspoon of the reserved cinnamon-sugar.
  • Brush the griddle with the remaining luscious tablespoon of oil, then continue cooking the rest of the batter while sprinkling each batch with delicious cinnamon-sugar.
