Cilantro Lime Shrimp

Make zesty cilantro lime shrimp with 5 ingredients. Enjoy solo or as a tasty complement to any meal.
Ingredients:
  • 2 tablespoons peanut oil, canola oil, or rice bran oil
  • 1  serrano chile (more if you like it spicy, or just a fraction of one if you want less heat), sliced into thin rings
  • 1 to 2 garlic cloves, sliced thinly
  • 1 pound shrimp, peeled and deveined
  • Kosher salt
  • 1/4 cup chopped cilantro
  • 1 to 2 tablespoons lime juice
Instructions:
  • Heat the oil in a large sauté pan or wok over high heat until shimmering. If the oil starts to smoke, briefly remove the pan from the heat.
  • Add the chiles to the pan and toss in oil, cooking for 30 seconds.
  • Add the shrimp and garlic to the pan, sprinkle with salt, and toss to coat with oil. Allow the shrimp to sear for 1 minute before tossing again. Stir-fry until cooked through, approximately 2 to 3 minutes.
  • Remove the pan from the heat and gently fold in the fresh cilantro and zesty lime juice. Stir well. Enjoy this flavorful dish hot or at room temperature. Serve by itself, with rice, or wrapped in a warm tortilla of your choice.
