Cinnamon Biscotti with Pistachios

Indulge in homemade cinnamon-pistachio biscotti- perfect for coffee, sharing, or gifting!
Ingredients:
  • 2.25 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 cup butter at room temperature
  • 1 cup white sugar
  • 1 cup cinnamon baking chips
  • 1 cup shelled pistachio nuts
  • 1 egg white, beaten
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a large baking sheet by lining it with parchment paper.
  • Combine flour, baking powder, salt, cinnamon, and cloves in a bowl, whisk until fully mixed. In a separate large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract. Gently stir in flour mixture until just combined, then mix in cinnamon chips and pistachio nuts.
  • Split the dough in half and mold each portion into a 9-inch long log using floured hands. Situate the logs on the lined baking sheet and coat them with beaten egg white.
  • Bake the logs in the preheated oven until they turn a beautiful golden brown, which should take about 30 to 35 minutes. Once baked, allow them to cool until they are easy to handle. Lower the oven temperature to 325 degrees F (165 degrees C) and carefully remove the parchment paper from the baking sheet.
  • Using a serrated knife, gently slice the logs into 1/2-inch thick biscotti. Place them on the baking sheet and put back in the oven.
  • Bake the biscotti in the oven until lightly toasted, about 10 minutes. Remove from oven, flip them over, and toast the other sides for an additional 10 minutes. Cool on wire racks.
