Delicious Italian cinnamon biscotti, a delightful twist on cinnamon toast that everyone will love!
Ingredients:
  • 2 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.66 cup white sugar
  • 6 tablespoons butter
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 325°F (165°C) and prepare a baking sheet with parchment paper.
  • Combine flour, 1 1/2 teaspoons cinnamon, baking powder, and salt; sift and set aside.
  • In a medium bowl, blend 2/3 cup sugar with butter until creamy. Add egg, egg yolk, and vanilla, then mix well. Fold in the flour mixture.
  • Divide dough in half on a lightly floured surface. Shape each half into a 9-inch long and 1 1/2-inch wide log. Place logs on the baking sheet and gently flatten. Brush with beaten egg.
  • Bake in the preheated oven for 25-30 minutes until golden and firm to the touch, then cool for 15 minutes before serving.
  • Slice each log diagonally into 1/2-inch-thick slices using a serrated knife. Arrange on baking sheet, cut-side down. Sprinkle 3 tablespoons sugar and 1 teaspoon cinnamon over biscotti slices.
  • Continue baking until golden brown and crispy, for an additional 15 to 20 minutes. Allow to cool on wire racks before transferring to an airtight container for storage.
