Indulge in delectable cinnamon cookies for a sweet treat.
Ingredients:
  • 1 cup butter or margarine, softened
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 4 cups Gold Medal™ all-purpose flour
  • 1 cup chopped pecans, toasted*
Instructions:
  • In a spacious bowl, use an electric mixer to whip the butter until creamy. Slowly incorporate the sugar, beating thoroughly. Mix in the eggs and vanilla until well combined. Gently add the flour on low speed until just mixed. Fold in the baking chips and pecans.
  • Divide the dough into 3 equal parts, each with a volume of 2 cups. Roll each part into a 12-inch log and wrap them in waxed paper. Chill in the refrigerator for 8 hours or store in an airtight container and freeze for up to 3 months.
  • Preheat oven to 350°F. Slice dough into 1/2-inch pieces and place them 2 inches apart on ungreased cookie sheets.
  • Bake for 13 to 15 minutes until edges turn a light golden brown. Allow to cool for 5 minutes, then transfer from cookie sheets to cooling racks.
