Savory Israeli couscous with warm cinnamon, tender broccoli, sweet cranberries, and crunchy almonds - a delightful side dish for any occasion.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large chopped onion
  • 2 cups Israeli couscous, uncooked
  • 2.5 cups water
  • 1 tablespoon vegetable bouillon base (such as Better Than Bouillon® Vegetable Base), or more to taste
  • 1 tablespoon ground cinnamon
  • 1 teaspoon garam masala
  • 1 bay leaf
  • 1 cup dried cranberries
  • 0.5 cup chopped broccoli
  • 0.5 cup chopped almonds
  • 1 tablespoon chopped fresh parsley, or to taste
Instructions:
  • In a skillet over medium heat, sauté onion in oil until soft and translucent, about 5 minutes. Stir in couscous and cook until lightly browned.
  • Combine water, bouillon, cinnamon, garam masala, and bay leaf in a pot and bring to a boil. Simmer covered until water is absorbed, about 8 to 10 minutes. Add cranberries, broccoli, and almonds under the lid and steam until softened, around 3 minutes. Season with salt and pepper, garnish with parsley, and serve warm.
