Get the kids involved in making tasty cinnamon pikelets for a fun kitchen activity.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 100g (1/2 cup) caster sugar
  • 2.50 gm ground cinnamon
  • 2.00 gm baking powder
  • 185ml (3/4 cup) milk
  • 1 egg, lightly whisked
  • 20g butter, melted
  • 5.00 gm hot water
  • 10.00 gm butter, extra
  • Icing sugar, to dust
  • 115g (1/3 cup) strawberry jam
  • 80ml (1/3 cup) double cream
Instructions:
  • In a mixing bowl, combine the sifted flour, sugar, cinnamon, and baking powder. Create a well in the center and pour in the milk, egg, melted butter, and water. Whisk with a wire balloon whisk until a smooth batter forms.
  • In a large non-stick frying pan, melt half of the extra butter over medium heat until foamy. Pour four 60ml (1/4-cup) portions of batter around the edge of the pan. Cook for about 30 seconds, or until bubbles form on the surface and the pikelets are golden underneath. Flip and cook for another minute, or until golden. Transfer the pikelets to a plate. Repeat the process with the remaining butter and batter.
  • Plate the pikelets individually. Sprinkle with icing sugar, then add a dollop of jam and cream on top. Serve promptly.
