Indulge in a refreshing pineapple mint granita for a delightful finish.
Ingredients:
  • 60g (1/3 cup, lightly packed) brown sugar
  • 5.00 gm ground cinnamon
  • 1 large pineapple, peeled, cut into 12 wedges
  • 225g (1 cup) white sugar
  • 500ml (2 cups) cold water
  • 1 lime, rind finely grated
  • 200ml lime juice
  • 250.00 ml chopped fresh mint
Instructions:
  • For the lime & mint granita, combine sugar, water, and lime rind in a saucepan over medium-low heat. Stir and cook until sugar dissolves. Bring to a boil, then simmer until syrup thickens slightly, about 5 minutes. Remove from heat, mix in lime juice, and cool completely. Pour into a 31 x 21cm slab pan. Freeze for 4-6 hours until firm.
  • Combine the granita mixture and mint in a food processor. Pulse for 30 seconds or until smooth. Pour back into the tray and freeze for 4 hours until firm.
  • Heat up your barbecue grill or chargrill on medium heat. Mix the sugar and cinnamon on a plate. Skewer the pineapple onto metal or soaked bamboo sticks. Roll the pineapple in the sugar mixture. Grill each side for 1 minute until caramelized. Move to a platter and serve with lime & mint granita.
