Cinnamon shortbread stars

Elevate your shortbread with a hint of cinnamon for a flavorful twist!
Ingredients:
  • 250g Flora original margarine
  • 220g caster sugar
  • 300g plain flour
  • 90g rice flour
  • 3.75 gm ground cinnamon
  • Cinnamon sugar, to sprinkle
Instructions:
  • Preheat the oven to 160C and line 2 baking trays with baking paper. In a bowl, use an electric mixer to beat the margarine and caster sugar until pale and creamy. Stir in the flour and ground cinnamon until combined, then shape the dough into a disc. Cover with plastic wrap and refrigerate for 30 mins to rest.
  • Roll out the dough on a floured surface to a thin 3mm disc. Cut star shapes using a 5cm cutter. Arrange on lined trays, sprinkle with cinnamon sugar, and bake for 12-15 mins, rotating trays once, until lightly golden. Cool completely on trays.
