Transform traditional shortbread into festive star-shaped Christmas cookies.
Ingredients:
  • 120g butter
  • 80g icing sugar
  • 1.25 gm ground cinnamon
  • 2 egg yolks
  • 150g plain flour
  • 20.00 gm caster sugar
  • 1.25 gm ground cinnamon, extra
Instructions:
  • Preheat your oven to a toasty 180°C and lay down some parchment paper on 2 trays.
  • Achieve a creamy texture by blending butter, icing sugar, vanilla bean paste, and cinnamon using an electric mixer. Incorporate egg yolks until well mixed. Add combined flours and mix. Transfer dough to a lightly floured surface and gently knead until smooth.
  • Divide the dough into 2 portions and roll out one portion on a lightly floured surface into a 3mm-thick disc. Use star-shaped pastry cutters ranging from 3-10cm in diameter to cut out star shapes from the disc, reusing any extra dough. Transfer the stars onto a lined tray and repeat with the second portion of dough.
  • In a small bowl, mix the caster sugar and cinnamon together. Sprinkle the mixture evenly over each biscuit. Bake in a preheated oven for 10-12 minutes, or until lightly golden. Allow the biscuits to cool completely on the trays.
