Impress this Christmas with crispy shortbread cookies.
Ingredients:
  • 225g unsalted butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 225g (1 1/2 cups) plain flour
  • 120g (2/3 cup) rice flour
  • 5.00 gm ground cinnamon
  • Pinch of salt
  • Icing sugar mixture, to dust
Instructions:
  • - Preheat oven to 190°C. - Combine butter and sugar in a food processor and blend until pale and creamy. - Add sifted flours, cinnamon, and salt; pulse until just combined. - Transfer mixture to a lightly floured surface, knead into a soft dough (it may seem crumbly). - Shape dough into a disc, wrap in plastic, and chill in fridge for 30 minutes.
  • Roll out the dough on a lightly floured surface until it is 2mm thick. Use a 5cm-diameter star-shaped pastry cutter to create 40-44 stars. Place the stars on 2 baking trays and bake them in the oven for around 15 minutes, swapping the trays halfway through baking, until they turn golden. Let them rest on the trays for 5 minutes before transferring them to a wire rack to cool. Dust the stars with icing sugar and serve them alongside iced Christmas puddings.
