Moist and delicious spice cake with walnuts, raisins, and white wine - easy to make!
Ingredients:
  • 3 cups flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cardamom
  • 0.75 teaspoon ground cinnamon
  • 2 sticks butter, at room temperature
  • 1.3333333730698 cups turbinado sugar, plus more for sprinkling
  • 0.75 cup brown rice syrup
  • 1 cup dry white wine such as Chenin Blanc
  • 0.5 cup coarsely chopped pecans or walnuts, plus more for garnish
  • 0.5 cup golden raisins
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking pan, line the bottom with parchment paper, and grease the parchment or spray with cooking spray.
  • Combine flour, baking powder, baking soda, cardamom, cinnamon, and salt in a bowl. Cream together butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Mix in syrup, then add eggs one at a time, beating well after each. Blend in wine and half of the flour mixture, then mix in the rest of the flour mixture. Stir in nuts and raisins until just combined. Pour batter into prepared pan.
  • Bake for 45 minutes until a toothpick inserted in the center comes out clean. Cool the cake completely in the pan on a wire rack for about 1 hour.
  • Add a touch of turbinado sugar and nuts for a beautiful finishing touch.
