Cinnamon-Brown Sugar Pop-Tart Cake

Pop-Tarts crumble cake: Crumbled cinnamon-brown sugar toaster pastries layered in crust, cake, and frosting for a burst of flavor.
Ingredients:
  • cooking spray
  • 6 cinnamon-brown sugar toaster pastries (such as Pop-Tarts®)
  • 5 tablespoons unsalted butter, melted
  • 0.75 cup brown sugar, divided
  • 1 tablespoon all-purpose flour
  • 4 teaspoons ground cinnamon, divided
  • 1 teaspoon milk
  • 0.5 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 1 egg, separated
  • 1.5 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.75 cup milk
  • 1.5 teaspoons white vinegar
  • 1 cup cream cheese frosting, or to taste
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C and generously coat an 8-inch square pan with cooking spray.
  • Take 4 toaster pastries and crush them in a bowl. Combine with melted butter and press into the pan to form the crust.
  • Mix together 1/4 cup brown sugar, 1 tablespoon flour, 1 teaspoon cinnamon, and 1 teaspoon milk in a bowl, then spread the mixture over the crust.
  • Cream together 1/2 cup brown sugar, softened butter, and white sugar until smooth; then add egg yolk and vanilla extract and mix until well combined. In a separate bowl, mix 1 cup flour, baking powder, and salt. Lastly, whisk together 3/4 cup milk and vinegar.
  • Alternate combining the flour mixture and the milk-vinegar mixture into the butter mixture until well mixed. Gently fold in the egg whites. Crumble one toaster pastry over the batter and gently fold it in. Pour the batter over the crust.
  • Bake in the preheated oven for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely for at least 1 hour.
  • Cover the cake with frosting and sprinkle one crumbled toaster pastry on top.
