Flat Iron steaks seared with a spicy cinnamon-brown sugar rub, topped with melted Gorgonzola cheese.
Ingredients:
  • 1 tablespoon ground cinnamon
  • 1 tablespoon cracked black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 teaspoon cayenne pepper, or to taste
  • 0.25 cup dark brown sugar
  • 4 (8 ounce) flat iron steaks
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 0.25 cup red onion, minced
  • 1 cup Cabernet Sauvignon (or other dry red wine)
  • 1 cup crumbled Gorgonzola cheese
  • 2 tablespoons chopped fresh basil
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and the outdoor grill to medium-high heat, then lightly oil the grate.
  • Mix together the cinnamon, black pepper, garlic powder, chili powder, cayenne pepper, and brown sugar in a small bowl. Rub the mixture over the flat iron steaks, ensuring all sides are coated, then press it gently into the meat. Let it sit aside.
  • In a skillet over medium heat, heat olive oil. Add garlic and onion; sauté until onion softens and turns translucent, approximately 5 minutes. Stir in red wine and boil until nearly evaporated, about 5 more minutes. Remove onions from skillet and set aside.
  • Grill the flat iron steaks for 4 minutes on each side until perfectly seared, then transfer to a sizzling skillet. Generously heap the steaks with the savory onion blend and a sprinkle of tangy Gorgonzola cheese.
  • Roast in the warm oven until the cheese is gooey and the steaks are cooked to your liking, approximately 5 minutes for medium doneness. Top with fresh chopped basil before serving.
