Refreshing Peruvian ceviche: Citrus "cooks" fresh fish for a vibrant summer meal. Essential to use freshly caught fish.
Ingredients:
  • 0.5 cup fresh lemon juice
  • 0.25 cup fresh lime juice
  • 0.25 cup fresh orange juice
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons extra virgin olive oil
  • 1 pound fresh sea bass fillets, sliced 1/4 inch thick
  • 0.25 cup chopped fresh cilantro
  • 1 onion, thinly sliced
  • 2 avocados - peeled, pitted, and cubed
  • salt and pepper to taste
  • 4 hard-cooked eggs, quartered
Instructions:
  • Mix lemon juice, lime juice, ginger, and olive oil in a medium bowl. Add bass and coat well. Marinate covered in the fridge for 2 hours until fish turns white and opaque.
  • Combine the cilantro, onion, and avocado in a bowl. Season with salt and pepper to taste, then toss gently. Serve with wedges of hard-cooked egg.
