Delicious citrus chicken - easy and satisfying.
Ingredients:
  • 6 skinless chicken breast fillets
  • 3 cloves garlic, crushed
  • 105.60 gm orange marmalade
  • 1 orange, zested, juiced
  • 20g butter
  • 300ml chicken style liquid stock
  • Watercress, to serve
  • Orange slices, to serve
  • Olives, to serve
  • Red onion, thinly sliced, to serve
  • Low-fat feta, to serve
Instructions:
  • Heat your oven to 180°C.
  • Season the chicken breasts with a sprinkle of salt and pepper. In a bowl, mix together garlic, marmalade, orange zest, and butter, beating until well combined.
  • Place the chicken in a roasting pan, generously coat it with the vibrant orange mixture, cover with foil, and bake in the oven for 10 minutes. Uncover and bake for an additional 10-15 minutes until the chicken is tender and cooked through. Let it rest before serving.
  • Combine the juice and stock in a roasting pan over low heat until thickened. Pour the sticky mixture over the chicken. Serve alongside a refreshing salad of watercress, fresh orange slices, olives, red onion, and low-fat feta.
