Citrus juices elevate this quick and tasty chicken dish with vibrant flavors.
Ingredients:
  • 2 cups uncooked instant rice
  • 2 cups water
  • 4 boneless skinless chicken breast halves
  • 1 medium red bell pepper, cut into bite-sized strips
  • 1 medium green bell pepper, cut into bite-sized strips
  • 1/3 cup orange juice
  • 2 tablespoons lime juice
  • 2 tablespoons honey
  • 1/2 teaspoon paprika
  • Dash pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Chopped fresh cilantro, if desired
Instructions:
  • Prepare the rice in 2 cups of water following the package instructions.
  • Place chicken breast halves in a large skillet and arrange bell pepper strips around them. In a small bowl, mix together orange juice, lime juice, honey, paprika, salt, and pepper until well combined.
  • Pour the fragrant orange juice mixture over the chicken and bell peppers, allowing the flavors to meld harmoniously. Bring the ingredients to a gentle boil, then lower the heat, cover the skillet, and let it simmer for 10 to 12 minutes until the chicken is tender and the juices run clear. Carefully remove the chicken using a slotted spoon and place it eloquently on a serving platter, covering it to retain its warmth and succulence.
  • Blend cornstarch and 2 tablespoons of water in a small bowl until smooth. Stir the mixture into the hot liquid in the skillet. Cook over medium heat until boiling and thickened, stirring constantly. Spoon the sauce over the chicken, sprinkle with cilantro, and serve with rice.
