Tender citrus chicken with orange-infused honey glaze.
Ingredients:
  • 1.8kg whole chicken
  • 3.75 gm ground paprika
  • 1 orange, quartered
  • 6 fresh thyme sprigs, plus extra to serve
  • 255.00 gm chicken stock
  • 1 brown onion, chopped
  • 1 bunch dutch carrots, trimmed
  • 150g green beans, trimmed
  • 1 bunch broccolini, trimmed
  • 131.25 gm orange juice
  • 57.20 gm honey
  • Crusty bread, to serve
Instructions:
  • Ensure the chicken is dry by patting with paper towel, including the cavity. Tuck the wings under and tie the legs together with kitchen string. Rub the chicken all over with 1 teaspoon of paprika, then season with salt. Squeeze the orange quarters into a 5.5 litre slow cooker. Add the squeezed orange quarters, thyme, stock, and onion to the slow cooker. Place the chicken on top. Cover and cook on HIGH for 3 hours and 30 minutes, or until the chicken is nearly cooked through.
  • 1. Toss in the carrots and simmer on HIGH for 15 minutes. 2. Introduce the beans and broccolini. Continue cooking until the chicken is tender. 3. Power down the slow cooker and let it rest for 15 minutes before serving.
  • In a small saucepan over low heat, combine orange juice, honey, garlic, and remaining paprika. Cook until honey dissolves, about 1 minute. Increase heat to medium-high and cook without stirring for 4 minutes until the mixture thickens.
  • Plate the chicken and vegetables on a large serving platter. Drizzle the honey glaze generously over the chicken, then sprinkle with extra thyme. Serve with bread on the side.
