Indulge in a citrus-infused pudding paired with a delightful fruit salad to brighten up cozy winter nights.
Ingredients:
  • 80g butter
  • 268.75 gm caster sugar
  • 1 lemon, finely grated rind, juiced (1/3 cup)
  • 1 orange, finely grated rind, juiced (1/4 cup)
  • 1 lime, finely grated rind, juiced (2 tbsp)
  • 3 eggs, separated
  • 112.50 gm self-raising flour
  • 257.50 gm milk
  • icing sugar, to serve
  • 2 pink grapefruit
  • 2 yellow grapefruit
  • 2 oranges
  • 1 lemon
  • 2 limes
  • 40.00 gm caster sugar
Instructions:
  • Preheat the oven to 180°C. Lightly grease 6 ovenproof dishes (1 1/4-cup capacity each) with butter. Use an electric mixer to cream together butter, 1 cup caster sugar, lemon, orange, and lime rind until light and creamy. Add egg yolks one at a time until well combined. Transfer the mixture to a large bowl and stir in the citrus juice. Wash and dry the beaters and bowl.
  • Gently sift the flour over the pudding mixture, then stir in the milk until well combined. Whip the egg whites with a pinch of salt until soft peaks form. Gradually add the rest of the caster sugar, beating until thick and glossy. Fold a large spoonful of the egg white mixture into the pudding. Once combined, gently fold in the remaining egg white mixture.
  • Fill the prepared baking dishes three-quarters full with the mixture. Place the dishes in a large baking pan and add hot water to reach halfway up the sides of the dishes.
  • Bake until the puddings are golden, puffed, and spongy. Sprinkle with icing sugar and serve with citrus salad.
  • For the citrus salad: With a sharp knife, peel the lemon, limes, grapefruits, and oranges, then cut out fruit segments over a bowl to collect juices. Sprinkle sugar and mix thoroughly.
