Create delicious citrus egg yolk cookies using leftover yolks.
Ingredients:
  • 1.5 cups white sugar
  • 1 cup butter, softened
  • 0.5 teaspoon lemon extract
  • 0.5 teaspoon orange extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon cream of tartar
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C and prepare your baking sheets by greasing or lining them with parchment paper.
  • In a bowl, blend sugar and butter with an electric mixer until creamy. In another bowl, mix egg yolks, vanilla extract, lemon extract, and orange extract. Combine the egg yolk mixture with the butter mixture and beat until smooth.
  • Combine sifted flour, baking soda, and cream of tartar in a bowl. Mix into the butter mixture until a cohesive dough forms. Shape the dough into walnut-sized balls and arrange them on baking sheets. Gently flatten the dough balls.
  • Bake in the preheated oven for 8-10 minutes until the edges are golden and the center is set.
