Indulge in a refreshing and airy low-fat citrus dessert.
Ingredients:
  • 155g (3/4 cup) caster sugar
  • 40g light dairy spread
  • 1 tsp finely grated lemon rind
  • 1 tsp finely grated orange rind
  • 2 eggs, separated
  • 42.00 gm fresh lemon juice
  • 42.00 gm fresh orange juice
  • 250ml (1 cup) skim milk
  • 75g (1/2 cup) self-raising flour
  • 1 egg white
  • Icing sugar mixture, to dust
Instructions:
  • Preheat your oven to 180°C. In a bowl, use an electric beater to whip together sugar, dairy spread, lemon and orange zest, and egg yolks until creamy.
  • Combine the juices and milk, then sift over the flour and fold together. In a separate bowl, use an electric beater to whisk the egg white until soft peaks form, then gently fold it into the flour mixture.
  • Transfer the citrus mixture into a 1.25L (5-cup) ovenproof dish and set it in a roasting pan. Add boiling water halfway up the dish. Bake for 35 minutes or until golden brown. Sprinkle with icing sugar before serving.
