Citrus-infused roasted root vegetables - a tasty vegan side dish.
Ingredients:
  • 2 pounds sweet potatoes, peeled and cut into wedges
  • 1 pound rutabagas, peeled and cut into wedges
  • 1 medium onion, thinly sliced
  • 3 tablespoons extra-virgin olive oil
  • 1 cup chopped fresh rosemary
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Mix sweet potatoes, rutabagas, onion, and oil in a large bowl or resealable bag until well coated. Spread mixture into a 9x13-inch baking dish and sprinkle with rosemary, salt, and pepper.
  • "Roast in the preheated oven for 20 minutes until veggies are tender, giving them a stir halfway through. Pour in lemon, lime, and orange juices, mix well, then bake for an additional 5 minutes. Enjoy hot or warm."
