Traditional potato salad with red potatoes - a beloved side dish favorite.
Ingredients:
  • 2 pounds red boiling potatoes, scrubbed
  • 2 tablespoons red wine vinegar
  • 0.5 teaspoon freshly ground black pepper
  • 3 hard-cooked eggs
  • 1 small celery stalk
  • 0.25 cup chopped sweet pickle (not relish)
  • 3 scallions
  • 2 tablespoons chopped fresh parsley
  • 0.5 cup mayonnaise
  • 2 tablespoons Dijon-style mustard
Instructions:
  • Add potatoes to a pot with enough water to cover them. Boil until tender, about 25-30 minutes. Drain, rinse with cold water, and let cool slightly before using.
  • Dice the warm potatoes into 3/4-inch pieces, layering them in a bowl and seasoning with vinegar, salt, and pepper as you go.
  • Dice eggs, celery, and pickle into 1/4-inch pieces. Thinly slice scallions and chop parsley. Combine all ingredients with mayonnaise and mustard until well mixed. Chill covered before serving.
