Gourmet beef fillet with a hint of truffle oil for an upscale appetizer.
Ingredients:
  • 250g piece best-quality beef fillet, trimmed
  • 40.00 ml truffle oil (see note) or extra virgin olive oil
  • 40.00 ml toasted pine nuts
  • 40.00 ml finely chopped chives
  • 40g parmesan
  • Wild rocket leaves, to serve
Instructions:
  • Wrap the beef snugly in plastic wrap and freeze for 30 minutes to ensure easy thin slicing.
  • Unwrap the beef and slice it very thinly using a sharp knife. Flatten the slices between sheets of plastic wrap with a rolling pin.
  • Place 4-5 slices of beef on individual serving plates and generously drizzle with oil. Season with sea salt and freshly ground black pepper, then sprinkle with pine nuts, chives, and shaved parmesan. Serve alongside rocket leaves and lemon wedges for a refreshing touch.
