Classic Cheese Soufflé

Impress your guests with a fluffy golden cheese soufflé, hot out of the oven and bursting with heavenly aroma. Delightful even after it deflates, this dish is simply delicious!
Ingredients:
  • 1/4 cup butter or margarine
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground mustard
  • Dash ground red pepper (cayenne)
  • 1 cup milk
  • 1 cup shredded Cheddar cheese (4 oz)
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
Instructions:
  • Preheat the oven to 350°F. Butter a 1-quart soufflé dish or casserole. Create a 4-inch-wide band of triple-thickness foil that is 2 inches longer than the circumference of the dish. Butter one side of the foil and wrap it securely, buttered side facing in, around the top edge of the dish.
  • In a 2-quart saucepan, melt butter over medium heat. Add flour, salt, mustard, and red pepper; cook until smooth and bubbly. Remove from heat and whisk in milk. Heat until boiling, then stir in cheese until melted. That's it - your sauce is ready!
  • In a medium bowl, whip egg whites and cream of tartar with an electric mixer until stiff but not dry. Set aside. In a separate small bowl, beat egg yolks until very thick and lemon colored, then stir into the cheese mixture. Gently fold a quarter of the egg whites into the cheese mixture, then fold in the rest. Pour the mixture into a soufflé dish with care.
  • Bake for 50 to 60 minutes or until a knife inserted between the center and edge comes out clean. Remove the foil band and serve immediately by dividing the soufflé into sections using two forks.
