Impress with a showstopping cheese souffle masterpiece.
Ingredients:
  • Melted butter, to grease
  • Dried (packaged) breadcrumbs, to dust
  • 50g butter
  • 40g (1/4 cup) plain flour
  • 250ml (1 cup) milk
  • 120g (1 1/2 cups) coarsely grated vintage cheddar
  • 4 eggs, separated
Instructions:
  • Preheat your oven to 190°C and place a baking tray inside to heat up. Grease a 1.5L (6-cup) ovenproof dish with butter and sprinkle breadcrumbs evenly inside.
  • In a saucepan over medium heat, melt butter until it starts to foam. Add flour and cook while stirring for about 2 minutes until it bubbles and pulls away from the side.
  • Take the mixture off the heat and slowly whisk in half of the milk until it's smooth. Then, gradually whisk in the rest of the milk until the mixture is smooth and well combined.
  • Whisk over medium heat until the sauce boils and thickens, about 3-4 minutes. Add cheddar and stir until melted and the mixture is smooth.
  • Take the saucepan off the heat and swiftly blend in the egg yolks until thoroughly mixed. Transfer the mixture to a large bowl. In a separate clean, dry bowl, use an electric beater to whip the egg whites until stiff peaks form, being cautious not to overbeat.
  • Gently fold one-third of the egg white into the cheddar mixture using a large metal spoon. Repeat this process two more times with the remaining egg white, folding carefully each time.
  • Pour mixture into the prepared dish, smoothing the top with your finger. Place the dish on a preheated baking tray and bake for 25-30 minutes or until golden brown.
