Classic cheese soufflé recipe

Fluffy and simple cheese soufflé with only 7 ingredients. Classic favorite.
Ingredients:
  • Melted butter, to grease
  • Dried (packaged) breadcrumbs, to dust
  • 50g butter
  • 40g (1/4 cup) plain flour
  • 250ml (1 cup) milk
  • 120g ( 1 1/2 cups) coarsely grated vintage cheddar
  • 4 eggs, separated
Instructions:
  • Preheat the oven to 190C/170C fan forced. Place a baking tray in the oven to warm up while you generously grease a 1.5L (6 cup) ovenproof dish with butter and coat it with breadcrumbs.
  • In a saucepan over medium heat, melt butter until it starts foaming. Stir in flour and cook for 2 minutes until bubbly and pulls away from the sides.
  • Take the mixture off the heat. Slowly whisk in half of the milk until smooth. Gradually whisk in the rest of the milk until well combined.
  • Heat the pan over medium heat and whisk continuously for 3-4 minutes until the mixture boils and thickens. Stir in the cheddar until melted and the mixture is smooth.
  • Take the pan off the heat. Whisk in the egg yolks swiftly until thoroughly mixed. Pour the mixture into a large bowl.
  • Whip the egg whites in a clean, dry bowl with a stand mixer or electric beaters until they form firm peaks. Be cautious not to overbeat.
  • Gently fold one-third of the egg whites into the cheddar mixture using a large metal spoon. Repeat twice more with the remaining egg whites in two additional batches.
  • Transfer mixture into the prepared dish, smooth the top with your finger, place on a preheated tray, and bake for 25-30 minutes or until golden and risen.
