Indulge in a decadent chicken tetrazzini with Swiss cheese cream sauce, mushrooms, pasta, and bell peppers.
Ingredients:
  • 8 chicken tenderloins
  • 0.75 cup fresh sliced mushrooms
  • 1 red bell pepper, chopped
  • 0.5 yellow bell pepper, chopped
  • 1 (8 ounce) package uncooked spaghetti
  • 0.25 cup butter
  • 0.25 cup all-purpose flour
  • 1 cup chicken broth
  • ground black pepper to taste
  • 0.5 cup shredded Swiss cheese
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.25 cup grated Parmesan cheese for topping
Instructions:
  • In a large nonstick skillet, sauté the tenderloins until golden. Season with salt and pepper as desired. Add mushrooms, red bell peppers, and yellow bell peppers, cooking until vegetables are tender.
  • Prepare the spaghetti as per the package instructions, then drain and set it aside.
  • Melt butter or margarine in a large saucepan, then mix in flour. Slowly whisk in chicken broth and half-and-half. Cook over medium-low heat, stirring continuously until the sauce thickens. Season with garlic salt and ground black pepper. Stir in Swiss and Parmesan cheeses until melted and creamy, while still stirring constantly.
  • Combine the chicken-vegetable mixture and heat through. Mix with cooked pasta and sprinkle with grated Parmesan cheese, if preferred.
