Traditional Jewish holiday cookies, buttery and soft with jam filling.
Ingredients:
  • 1 cup unsalted butter, softened
  • 4 oz (half 8-oz package) cream cheese, softened
  • 1 egg yolk
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • Dash salt
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • Powdered sugar
  • 1 cup jam or preserves (any flavor)
Instructions:
  • Combine softened butter and cream cheese in a large bowl or stand mixer until smooth. Mix in egg yolk, vanilla, almond extract, and salt until well incorporated. Slowly add flour and mix until fully combined. Wrap dough in plastic wrap and chill in the refrigerator for 2 hours.
  • Preheat oven to 400°F and prepare cookie sheets with parchment paper.
  • Sprinkle work surface with powdered sugar. Roll out half of the dough with a rolling pin (keep the other half refrigerated). Use a 3-inch cookie cutter to cut out rounds. Place 2 teaspoons of jam in the center of each round. Moisten the edges of the dough with water and fold each into a 3-cornered shape. Arrange on cookie sheets.
  • Bake for 9 to 12 minutes until edges are lightly golden. Allow to cool on wire racks, then sprinkle with powdered sugar.
