Impress at your BBQ with homemade ice cream sandwiches: vanilla ice cream nestled between soft chocolate brownie cookies - a nostalgic sweet treat!
Ingredients:
  • 1 cup (130g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 stick (1/2 cup) unsalted butter
  • 4 ounces semisweet chocolate, chopped
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup (200g) firmly packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs
  • 1/2 gallon ice cream, any flavor
Instructions:
  • Preheat the oven to 350°F. Butter the bottom of a 15x11 jelly roll pan and line it with parchment paper, leaving an overhang on the sides for easy removal. The butter will help the parchment stick to the pan when spreading the batter.
  • Whisk the flour and baking powder in a small bowl until well combined. Set aside.
  • Prepare the chocolate sauce: Gently melt butter, chocolate, vanilla, and salt in a saucepan over low heat, stirring constantly. Remove from heat once fully melted.
  • Complete the batter by mixing the brown and white sugars into the chocolate mixture. Incorporate the eggs one at a time, stirring until fully blended. Gently fold in the flour mixture.
  • Smooth the batter in the pan: Utilize an offset spatula or standard spatula to evenly spread the batter into a thin layer on the baking sheet. Bake for 15 minutes until the brownie is slightly puffed up and the top appears dry.
  • Cool the brownie slab completely. Use parchment paper to lift the brownie out of the pan onto a cutting board. Cut it in half vertically using a knife. Place one half on top of the other to align them. Trim 1/4 inch off each side for even edges.
  • To assemble the ice cream sandwich, cover a baking sheet with plastic wrap, allowing extra to wrap the entire brownie later. Put one brownie slab on the plastic wrap.
  • Let the ice cream soften: Take it out of the freezer 15 minutes before making the sandwiches, allowing it to become scoopable and spreadable on the counter. Aim for a soft texture that holds its shape without turning runny.
  • Create delicious ice cream sandwiches by layering the softened ice cream evenly over one brownie slab on a plastic wrap-lined baking sheet. Top with the remaining brownie slab, wrap in plastic wrap, and freeze for a minimum of two hours.
  • Cut the ice cream sandwich into 6 rectangles or 12 squares. Re-wrap in plastic wrap and freeze.
