Classic Chocolate Ice Cream Sandwich

Indulge in nostalgic ice cream sandwiches: soft chocolate cookies with creamy vanilla ice cream. Irresistible!
Ingredients:
  • vegetable oil cooking spray
  • 0.5 cup all-purpose flour
  • 1 tablespoon all-purpose flour
  • 0.25 teaspoon kosher salt
  • 0.25 teaspoon baking soda
  • 0.33333334326744 cup sifted Dutch-process cocoa powder
  • 3 tablespoons unsalted butter, softened
  • 0.25 cup white sugar
  • 2 tablespoons light brown sugar
  • 0.5 teaspoon pure vanilla extract
  • 0.33333334326744 cup whole milk, at room temperature
  • 6 scoops vanilla ice cream
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet with a silicone liner like Silpat. Spray the liner with cooking spray and ensure it is fully covered by rubbing it in.
  • Combine 1/2 cup plus 1 tablespoon flour, salt, baking soda, and cocoa in a bowl. Whisk until fully mixed, and sift if needed for a smooth consistency.
  • In a separate bowl, combine butter, both sugars, and vanilla using a spatula until a smooth paste forms. Mix in the flour mixture and milk until the batter is smooth and stiff. Use a cookie scoop to place 12 scoops of batter onto the baking sheet.
  • Bake the cookies in the preheated oven until the tops look dry, 9 to 10 minutes. Remove from the oven, tap and shake the pan on the counter 5 times to settle the cookies, then let them cool on the pan for about 15 minutes until room temperature.
  • Place the baking sheet in the freezer until cookies are firm, approximately 15 minutes.
  • Take the cookies out of the freezer, gently lift them off the pan using the silicone liner. Use a chopstick to make 10 to 12 holes on the surface of each cookie. Place the cookies back in the freezer until you're ready to assemble.
  • 1. When ready to assemble, take the cookies out of the freezer. Flip one cookie over, add a scoop of ice cream on top, and sandwich it with another cookie. Serve right away or wrap in plastic and freeze for 3 hours before serving. Repeat for the rest of the ice cream sandwiches.
