Classic Potato Salad (Makeover)

Upgrade traditional potato salad with reduced-fat mayo, yellow mustard, sweet pickle relish, and a spicy kick of hot sauce.
Ingredients:
  • 6 medium red potatoes (2 lb), peeled
  • 3 hard-cooked eggs, chopped
  • 2 medium stalks celery, chopped (1 cup)
  • 4 medium green onions, chopped (1/4 cup)
  • 1/4 cup chopped red bell pepper
  • 3/4 cup reduced-fat mayonnaise
  • 1/4 cup sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon Frank's™ RedHot™ Original cayenne pepper sauce
  • Paprika
Instructions:
  • Place the potatoes in a 4-quart saucepan and cover them with water. Bring to a boil, then lower the heat, cover, and simmer for 20 to 30 minutes until the potatoes are tender. Drain and let them cool slightly before cutting them into cubes.
  • Combine potatoes, eggs, celery, onions, and bell pepper in a spacious bowl.
  • Combine mayonnaise, pickle relish, mustard, sugar, salt, black pepper, and pepper sauce in a small bowl, stirring until fully blended.
  • Mix dressing into potato mixture, tossing gently to combine. Chill in the refrigerator for at least 1 hour before serving. Finish by sprinkling paprika on top.
