Indulge in a savory and festive standing rib roast with this easy-to-follow recipe for a delicious holiday meal.
Ingredients:
  • 1 (7 pound) standing rib roast
  • 0.125 teaspoon salt
  • 1 pinch ground black pepper
  • 6 tablespoons red wine
  • 2 cups Swanson® Beef Stock or Swanson® Unsalted Beef Stock
  • 0.25 cup all-purpose flour
Instructions:
  • Preheat your oven to 325 degrees F. Season the beef generously with black pepper and place it in the roasting pan, rib-side down.
  • Roast the beef for 2 hours and 20 minutes for a perfect medium-rare, then let it rest on a cutting board for 20 minutes before slicing.
  • Remove any excess fat from the pan drippings. Add wine to the pan, bring to a boil over medium-high heat, and deglaze by scraping up the browned bits. Simmer over medium heat for 5 minutes. Strain the wine mixture into a 2-quart saucepan using a fine mesh sieve.
  • Whisk together stock and flour in a bowl. Slowly pour the mixture into a saucepan, whisking constantly. Cook over medium heat for 5 minutes until it thickens. Season with salt and pepper to taste. Serve the gravy with the beef.
