Classic Yorkshire pudding made with meat drippings, a perfect companion to roast beef.
Ingredients:
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 2 large eggs
  • 0.5 teaspoon salt
  • 3 tablespoons beef or bacon drippings
Instructions:
  • Combine flour, milk, eggs, and salt in a large bowl. Use an electric mixer to blend until smooth for about 5 minutes. Cover the mixture and refrigerate for 1 hour.
  • Preheat the oven to 425°F (220°C) and coat a 9x13-inch baking dish with savory beef drippings. Let the dish heat in the oven until the drippings are hot and sizzling, approximately 15 minutes.
  • Take the batter out of the refrigerator, give it a quick beat, and then transfer it into the prepared baking pan.
  • Bake in preheated oven at 400 degrees F for 20 minutes. Lower the temperature to 375 degrees F. Bake without opening the oven until pudding is puffed and golden brown, about 15 minutes more. Remove, cut into 8 squares, and serve hot.
