Salsa-topped Yorkshire puddings

Enhance with salsa for a contemporary take on a classic dish.
Ingredients:
  • 57.50 gm cooking oil
  • 250.00 ml plain flour
  • Pinch salt
  • 300ml milk
  • 1 egg
  • 4 tomatoes, seeded, finely chopped
  • 1 chorizo, sliced, char-grilled, chopped
  • 1 small red onion, finely chopped
  • 62.50 ml parsley, chopped, plus extra to serve
  • 36.40 gm olive oil
  • 40.00 ml white wine vinegar
  • 60g feta, crumbled
Instructions:
  • Preheat the oven to 200C. Grease each recess of a shallow muffin pan with 1 teaspoon of oil and heat in the oven for 5 minutes.
  • Combine flour and salt in a bowl, create a well in the center, and gradually mix in milk and egg until smooth using a hand blender or food processor.
  • Evenly distribute batter into muffin holes. Bake until puffed and golden, about 15-20 minutes.
  • In a bowl, mix together all salsa ingredients except for the feta. Season to taste. Spoon the salsa over the puddings and sprinkle with a bit of feta and parsley before serving.
