Pineapple salsa-topped pork tacos inspired by tacos al pastor.
Ingredients:
  • 1 pound ground pork
  • 1 tablespoon soy-based liquid seasoning (such as Maggi® Jugo)
  • 0.5 teaspoon chipotle powder
  • 1 clove garlic, minced
  • 1 cup diced fresh pineapple
  • 0.25 cup minced red onion
  • 1 small jalapeno pepper, seeded and minced
  • 2 tablespoons minced fresh cilantro
  • 0.5 lime, juiced
  • 8 (6 inch) corn tortillas
Instructions:
  • Mix ground pork, liquid seasoning, ground chipotle powder, and garlic in a bowl, allowing the flavors to infuse.
  • Prepare a vibrant pineapple salsa by mixing together fresh pineapple, red onion, spicy jalapeno, fragrant cilantro, zesty lime juice, and a pinch of salt in a bowl. Set aside to let the flavors meld together.
  • Heat a large skillet over high heat. Place ground pork in the skillet and cook, stirring occasionally, until fully browned with crisp edges, for about 7 to 10 minutes. Remove any excess grease. Transfer the cooked pork to a bowl to keep warm and then wipe the skillet clean.
  • Heat up tortillas in a skillet over gentle heat for about 20 seconds on each side. Then fill tortillas with meat mixture and top them with pineapple salsa.
