Elevate ground pork with a flavorful twist in homemade Mexican tacos.
Ingredients:
  • 10.00 gm sweet paprika
  • 5.00 gm ground cumin
  • 2 tsp dried oregano
  • 2.50 gm ground cinnamon
  • 400g pork mince
  • 12 small flour tortillas
  • 40g cheddar cheese
  • 1 small cos lettuce, finely shredded
  • 2 ripe tomatoes, finely chopped
  • 1 ripe avocado, stoned, peeled, finely chopped
  • Sour cream, to serve
Instructions:
  • In a large frying pan over medium heat, cook the onion and garlic in half of the oil until the onion softens, about 5 minutes. Then stir in the paprika, cumin, oregano, and cinnamon and cook for another minute until fragrant.
  • Cook the pork mince for 5 minutes, stirring constantly with a wooden spoon to ensure even cooking until it changes color and is fully cooked. Season with salt and pepper to taste.
  • Lay out a tortilla on a tidy work surface. Add a spoonful of the mince mixture and sprinkle with cheese. Roll it up to seal the filling and use a toothpick to secure. Repeat with the rest of the tortillas, mince, and cheese.
  • Heat the remaining oil in a large frying pan over high heat until sizzling. Cook the tortilla rolls, turning occasionally, for 3-4 minutes until they are golden and crisp. Remove from heat.
  • On serving plates, arrange the lettuce and top it with the pork rolls. Spoon the tomato and avocado over the rolls. Serve promptly with sour cream, if preferred.
