Spicy pork tacos

Enjoy zesty Thursday with spicy pork tacos.
Ingredients:
  • 2 long green chillies, deseeded, chopped
  • 3 garlic cloves, chopped
  • 2 tsp dried oregano
  • 1 tsp chilli powder
  • 40.00 ml cider vinegar
  • 600g pork fillets
  • 18.20 gm olive oil
  • 8 corn tortillas
  • 1/2 small iceberg lettuce, thinly shredded
  • 2 large tomatoes, thinly sliced
  • 2 small avocados, thinly sliced
  • toppings, to serve (see note)
Instructions:
  • Combine the chopped chillies, garlic, oregano, chilli powder, and vinegar in a food processor. Blend until smooth, then transfer the mixture to a large ceramic dish.
  • Place the pork in the mixture, ensuring it is well coated. Cover and refrigerate for at least 4 hours, or preferably overnight, turning occasionally.
  • Preheat your oven to 200°C/180°C fan-forced. Sear the pork in a hot frying pan with oil for 5 minutes until browned. Transfer the pork to a greased baking tray and bake for 12 to 15 minutes until cooked through. Allow it to rest for 10 minutes before thinly slicing.
  • Wrap the tortillas snugly in foil and place them on a baking tray. Bake for about 10 minutes, or until they are heated through to perfection.
  • Place the tortillas on a plate and cover with foil to keep them warm. Serve them alongside lettuce, tomatoes, avocado, pork, and desired toppings.
